Cauli rice with greens and mozzarella

I have been challenged to cook with Cauli rice for an entire week. What is that, you might ask? Only the hype of the moment for all foodies and health-addicts. Save yourself a few hundred calories in one meal by including the caulifllower rice in your menu. Faux carbs are fast becoming this year’s hot trend. Did you know that the usual white rice we have in our lunchbox has 150 calories per 100 grams? And this is only on its own, you don’t need me calculate the chicken, butter, or wine that come with it. Low-fi Cauli rice is the perfect introduction to grain alternatives. You can make it yourself, or you can buy Cauli Rice directly from Tesco, Asda, Waitrose, or Whole Foods. Available in 4 flavours (Original, Lemongrass and chilli, Mediterranean, and Indian pilau), the Cauli Rice has up to 75% fewer calories than rice, it is lower in carbs and ready in just 2½ minutes. For the next seven days I will experiment with flavours and textures, all part of the fun, because I am now on a quest of a healthy lifestyle and I am all up for sharing my findings with you!
