One of the great finds this year, these crostini have been my favorite, ever since I've discovered goat cheese. I love a great breakfast, and they make wonders. Also, if you have some leftover chicken, it won't go to waste and it will provide a delicious appetizer. Try it for yourself and be hooked!
1. Preheat the oven to 180 degrees/gas 4 and the grill to medium. Put the bread under the preheated grill and lightly toast on both sides. If you don't have a grill, you can toast it on your toaster.
2. Meanwhile, pour the oil into a bowl and add the garlic and oregano. Season to taste with salt and pepper and mix well. Remove the toasted bread slices from the grill and spoon a little of the oil mixture on one side only.
3. Place the bread slices, oiled sides up, on a baking sheet. Put some of the sliced chicken on top of each other, followed by a slice of tomato. Divide the slices of goat's cheese among them.
4. Drizzle over the remaining oil mixture and transfer to the preheated oven. Bake for about 5 minutes, or until the goat cheese is golden and starting to melt. Garnish with basil or oregano and serve immediately.
