Pasta amore with chicken Aurora sauce

Traveling to Venice is memorable not just because of the breathtaking sceneries, but because of the cuisine too. One of the best pasta eaten here. Came home with bags of pasta, like the ones above.  Made of oats and tomato, heart shaped, so pretty. The sauce is a version of chicken Aurora sauce.

1. Boil the pasta, drain really well. Boil the breast for 20 minutes. Drain. Heat the oil in a pan, fry the onion and garlic until soften. Add the diced chicken. Mix and fry until it turns gold.

2. Add the wine, lemon zest, rosemary, thyme and bay leaf. Simmer until it starts to reduce. Cut the bottom of the tomatoes in cross, leave in hot water for 3 minutes. Drain, wash in cold water then peal, remove the seeds and chop thinly.

3. Add the sour cream in the chicken sauce, mix until thickens. Add the tomatoes, season. Leave for a few minutes, add the pasta, parsley, basil, oregano, mix well. Serve hot with parmesan on top.
