Grilled turkey breast with couscous, shiitake mushrooms and halloumi warm salad

This day was the hottest day this year in London, according to the meteorologist. I was thinking about a healthy salad for the main course and this popped in my head. Couscous is so good and together with vegetables is sensational. Lime juice takes it to the next level!

Ingredients

Instructions

1. Heat a grill pan, grease with a tbsp of oil and add the thin sliced and seasoned turkey breast. Leave one minute on each side, or until it is gold. Leave in towel paper covered with a lid.

2. In the same pan, add the cheese and fry on both sides for one minute each. Leave aside and dice.

2. Boil the green vegetables and carrots in some water seasoned with salt. Drain well.

3. Prepare the couscous according to the package. Leave aside.

4. Heat a pan with one tbsp of olive oil, add the mushrooms and fry on high heat. Add the peppers, chopped garlic, a tbsp of butter and let it fry for one minute. Add the vegetables and leave on for a few more seconds until they heat through. Season with salt, pepper and oregano.

5. You can mix the couscous with the veggies if you prefer, topping with the halloumi cheese and turkey. Drizzle with lime juice, sprinkle with dill and eat while hot.
