Beef with rice noodles

This is a delicious traditional Chinese recipe. It seems an easy recipe, but it involves many cooking techniques and it is, as some say, a real test in the Cantonese cuisine. But, if I made it, and I am not an expert in this cuisine, you can to. The secret is to put just a little amount of vegetables in the wok at one time so they won't sweat.

1. Wash the beef well, dry on a kitchen towel. Mix the ingredients for the marinade sauce ai leave the beef in it for 15 minutes.

2. Heat a tsp of sesame oil in a wok on a medium heat. Fry the beef on a single layer on both parts, but don't mix too often, so the juice will remain inside the meat. Let it rest after it's done.

3. Add another tsp of sesame oil. Fry the vegetable mix, around 3 minutes, until it turns gold. Turn the heat higher, push the vegetables on the sides of the pan, add the rice noodles in the middle for 2 minutes, with care so they won't get stuck on the bottom.

4. Season with salt, soy sauce and sugar. Add the meat, mix, leave for 1 minute. Serve hot with chopped spring onions on top.
