Beans stew with sausages

There's been a long time since I've eaten beans stew. I tried to boil the beans for 6 hours and they were still  hard as rocks. Luckily, we received a  pressure cooker as a wedding gift that calmed the beans. I wanted to make my mamma's famous recipe, but couldn't find her online, so I tried the recipe of Bucataras. It is so tasty, served with pickles, roasted peppers or a simple onion.

1. Wash the beans and leave them over night in water. Drain really well the next day. Boil the beans in hot water, let it bubble. Drain the water, replace with another boiled one. Repeat the process 3 times until the beans are soft. If you have a pressure cooker use it accordingly.

2. When the beans are somewhat soft, add the diced carrot and peppers, chopped onion and spring onions and a pinch of salt. Let it boil for an hour and a half in water that covers all of the ingredients. If you boiled the beans in the pressure cooker, transfer them in a pot and let it boil for a half an hour, or until the vegetables are done.

3. Meanwhile, slice the sausages and fry them in hot oil. After the stew has reduced, add the sausages with the oil, tomato sauce, chopped dill, salt and pepper. Bake in the oven for 15 minutes, at 180 degrees.

4. Remove from the oven and sprinkle with thyme and copped parsley.
