Chicken in white wine sauce with mushrooms

I have adapted this recipe from my mother-in-law. I am nuts about mushrooms, as you can see from so many of my posts:) I added some chicken breast and a white wine sauce that will spin this recipe in a main course, just perfect for cold days. I'll make it in summer too, as it is so delicious.

1. Melt the butter in a pan. Saute the chopped leek and garlic for a few minutes. Add the mushrooms and red pepper chopped in bigger pieces. Let everything boil on medium heat for a few minutes.

2. In a separate pan, fry the diced chicken without any oil. Put in the pan with mushrooms, add chopped tomatoes, tomato juice and wine, boil for 7 minutes with the lid on. Make sure it won't reduce too much.

3. Add the cream and boil for a few more minutes. Season, add the paprika. Remove from the stove and sprinkle with parsley. Leave the lid on for a few minutes then serve with green salad or pickles.
