I've had these rolls the first time, a couple of years ago at a friend's house. I was completely converted, as I hate any cheese in cakes. This is a very sweet treat, delicious and will worth the while to spend almost 3 hours making them. Your house will smell like cinnamon and walnuts, the neighbors might pay you a visit, so make sure you have plenty of trays ready!

1. If you are using fresh yeast, make a mixture between yeast, honey and warm milk and leave it for 5-10 minutes. If using dried yeast, you don't have to respect the waiting time.

2. Add the mixed egg, soft butter, sugar and flour and mix well. The dough shouldn't stick to your hands. Brush it with some oil then leave it to rest, covered in a warm room for 2 hours, or until it will double its volume.

3. Spread some flour on a wooden board, then start to stretch the dough into a 40x55 cm sheet of 1/2 cm thick. Mix the cinnamon filling ingredients and spread unto the dough. Roll it and cut 4 cm thick buns, with a string, goes really fast. Put on a baking sheet with plenty of space between them and leave for 30 minutes more to rise.

4. Start making the chocolate sauce: Boil 150ml of water together with sugar and chopped chocolate and when it starts bubbling remove from the stove. Mix the cocoa powder with 25 ml water in a bowl, pour over the chocolate sauce and start boiling again at medium heat, whisking fast for a few minutes. Leave for 5 minutes at low heat until it thickens and adheres to a spoon bottom. Don't let it boil.

5. Start making the caramel sauce. First you have to measure all the ingredients and have them near by, because you won't be able to take your eyes and hands off the caramel pot. Begin by melting the butter on a medium to low heat. When it is completely melted, add the sugar and mix until absorbs the butter. Keep stirring until it starts to boil and big bubbles appear on the surface. It will take 3 minutes theoretical, it took 10 minutes to me as the sugar I was using wasn't that soft. You would still feel some sugar with the spoon, but it's OK.

6. Add the whipping cream at once and start whisking fast. Increase the heat to medium and keep stirring until the sauce starts foaming on the surface. It will take 2-3 minutes until the sauce starts boiling. Turn the heat down a little and let it simmer for 4-5 minutes until it starts to thicken. You shouldn't let it too much on the stove, as it will thicken as it cools down. Remove from the fire and pour in a different bowl to stop the boiling. Add salt, vanilla and cognac.

7. Preheat the oven to 200 degrees and bake for 10 minutes. Check the rolls soon, as they will turn gold quickly.

8. Mix the ingredients for the cheese cream and while hot, glaze the rolls and sprinkle with chopped nuts. Drizzle with chocolate and caramel sauce.
