Beef in red wine sauce with peanuts stuffed mushrooms

I love so much stuffed mushrooms, haven't done them in a while and now I discovered this recipe with peanuts. They are so tasty, I am so sorry I didn't make more. Also, the beef is my favorite meat after fish, so this is the reason behind paring them.

1. Prepare the sauce first. Heat the olive oil in a sauce pan. Add the onions and fry for 10 minutes until they become gold and caramelized. Add the vinegar then let it boil until it evaporates.

2. Add the red wine, leave until it evaporates, mix so they won't stick, Add the soup, boil, reduce up to a quarter. Sieve the sauce then keep in a recipient.

3. Heat the oven to 200 degrees. Season the portobello mushrooms and grease with some oil, then put in a tray lined with baking paper, bake for 15 minutes.

4. In another pan, heat a tbsp of olive oil, add the onion, mushrooms and garlic, leave until it softens for 5 minutes. Remove from the heat and add the peanuts, parsley and half the parmesan. Remove the portobello mushrooms from the oven, stuff with this mix and sprinkle some parmesan on top. Leave in the oven for 10 minutes.

5. Meanwhile, season the beef. heat the oil in a pan on high heat. Add the beef, fry on both parts until it turns gold. Heat the oven at 200 degrees and leave the meat for 10 minutes, turning after 5 minutes.

6. Let it rest on a wooden rack, cover with aluminum foil for 2 minutes. Add the sauce the meat left in the initial sauce, heat on the stove and add the butter. Serve with the meat and mushrooms, decorate with watercress.
