French spinach soup
I adore vegetable soup. Whenever my mom with do french spinach soup, I knew spring came. In London we can't find these type of vegetables, which is why I brought from home a bunch. I called my mom to tell me the exact recipe and it turned out perfect.

1. Fill a pot with 2 litres of water. Boil the onion, carrots, celeriac and potato with salt and peppercorns, 2 bay leaves, at low heat with the lid on. After everything is soft add the rice, spring onions and let them simmer for 10 minutes.
2. Add the boiled borsh and when it starts to bubble, add the spinach, red orach, salad and sorrel, chopped big. Leave for 5-10 minutes with the lid on.
3. In a bowl, mix the egg with the cream, add 3 ladles of soup, mix well, pour slowly in the pot. Add lovage, parsley and some thyme.
