I am a huge fan of salads, as you've seen in my recipes. Last week I've been to Vapiano and my friend ordered this spinach and goat cheese salad. She was really impressed with it, I had to take a bite and I was smitten too! The sweetness and freshness of strawberries pair perfectly the strong flavor of the goat cheese. You definitely have to try it!

1. Wash the baby spinach and strawberries really well. I use the Brita water filter jug, because the filtration technology reduces limescale and impurities that impair taste. We want our salad to taste just as great as it looks! Cut the strawberries in quarters, slice the red onion thinly, and dice the goat cheese.

2. Roast the pine nuts until they turn gold. Don't overcook them, or they will become bitter. Mix all the ingredients.

3. Next you have two option: you either make the dressing with the ingredients I have just mentioned above, or, if you have the time and energy, try this raspberry maple dressing recipe: mix 10 whole raspberries with 1/4 cup of white wine vinegar, 1/4 cup maple syrup, 1 tbsp Dijon mustard, 1 tbsp dried tarragon, 1/4 tsp salt and 1/2 cup olive oil. You can use a blender or a food processor to puree them. Drizzle over the salad. strawberry and spinach saladstrawberry and spinach salad
