The perfect summer alternative, this Gordon Ramsay dish is incredible simple to prepare. I've served it as an entree for Valentine's Day and it was greatly appreciated.

1. First, make the sweet and sour dressing. In a small bowl, whisk together the wine vinegar, 1tbsp honey and most of the lemon juice to combine, then gradually whisk in the extra virgin olive oil. Stir in the thyme leaves and season with salt and pepper. Taste for seasoning, adding more honey or lemon if you feel it is needed. The dressing should have the perfect balance of sweet, salty and sour.

2. Cut the courgettes on the diagonal into 1 cm thick slices. Season them then coat with flour. Whisk the eggs in a bowl then add two tablespoons of flour into the mixture and beat well.  Coat the courgette in this mixture. Heat the oil in a pan on a medium-high heat, then fry the courgette slices for a couple of minutes on each side until they are lightly browned and tender. Drain on a paper towel.

3. Arrange the slices of prosciutto and courgette on individual plates. Drizzle over the sweet and sour dressing and scatter over the pine nuts and parsley leaves. Serve warm or at room temperature.Grilled courgette with prosciutto salad
