Spaghetti with tomato and chicken gizzards
I absolutely love pasta with plenty of sauce and tasty meat. The chicken gizzards are so underrated and need more recognition. They are one of my favourite cuts of meat and this recipe has been the best I've tasted in a long time.

1. Heat the oil in a deep pot and sauté the onion and red pepper for a couple of minutes on high heat. Add the garlic, tomato, chopped parsley, salt, pepper, thyme, oregano, paprika and gizzards, together with two cups of water.
2. Bring to a boil on medium heat, then add another cup of water in which you dissolved the tomato paste. Put the lid on the pot and let the stew simmer for about an hour, on low heat, or until the meat is tender. Make sure the sauce reduces three thirds. If you need more water, you can add at this stage.
