Chicken breast with peas stew
I love peas, especially the way my uncle makes it, that I could eat it all year long and never get enough. Unfortunately, I don't know his recipe yet. Meanwhile, we shall enjoy this recipe I have from Teo's blog. I respected the recipe and it turned out so delicious, although I am really fussy when it comes to peas dishes.
I tried so many before, never being totally satisfied. When I saw this one has no carrots, peppers, I thought there might be something strange, but rest assured, it is perfect. Serve it with summer salad and a glass of white wine.
1. Saute the onion a tbsp of oil until it becomes translucent. Add the flour, paprika and mix well until they are all incorporated.
2. Add the peas, tomato juice, mix lightly and let it boil for 5 minutes. Pour the milk, mix. If it is too thick, you can add some chicken stock or white wine. If you want it sweeter, add more milk, but for a sour taste add more tomato.
3. Season and add a bunch of chopped dill.
4. Meanwhile, dice the meat, season then fry it on a grill with no oil. Add it in the peas stew and boil for a few minutes. Put the lid on after everything is done and turn off the heat.
