Balsamic glazed tuna steak with basil and cherry tomatoes

1. Marinade the tuna steaks in garlic, balsamic vinegar and brown sugar for 30 minutes.
2. Remove the tuna from the marinade, while you reserve the sauce. Dry with kitchen towel. Heat the olive oil in a large heavy base frying pan.
3. Fry the fish for 3 minutes on each side. Add the cherry tomatoes and sizzle for 2 minutes.
4. Add in the basil leaves and the crushed red pepper flakes. Add the marinade and sizzle into a thick syrupy glaze. Season with salt and pepper and serve hot.
