Strawberry and lemon shortcake
This cake is so fresh, lemony and plentiful, just the way my family likes it. I have to thank Aduluta for this delicious recipe!
1. Rub the butter with sugar until it becomes fluffy. Add the flour and salt, mix well until it crumbles then form a dough by hand.
2. Prep a tray of 21x33cm, rub with some butter and stretch the dough in the tray. I used my fingers, didn't have any roll. Bake in a preheated oven at 180 degrees for 10-12 minutes until it starts to come off the sides of the tray.
3. Mix the pureed strawberries with zest, lemon juice and sugar. Add the eggs, mix well, add the flour and salt. Pour this liquid on top of the warm cake and pop in the oven for another 20-25 minutes.
4. Let it cool at room temperature, then keep in the fridge. Cut using a knife with a wet blade.
